It takes imagination, even audacity, to create a restaurant as minimalist and modern as Caelis in the Hotel Palace, the grande dame of Barcelona’s hotels. But head chef Romain Fornell, the youngest chef ever to gain a one Michelin star rating in France, needed a fresh, new space for his fresh, new cuisine.
