This is high-wire cooking without a net. The audacious Xavier Pellicer has created a cuisine out of whole cloth and has won plaudits and fashionable fans around the world. The restaurant itself is austere with blond wood, gray-dressed waiters, perhaps the restrained detail of a single flower on each table with water dyed to match. That said, the ambience is bright and buzzing with the smart set, and waitstaff are both knowledgeable and friendly. Pellicer’s genius is in charge, so come with an open mind. Recent dishes have included tarte tatin of eels with apples, artichokes and foie gras, baby goat roasted with kalamata olives, pineapple soup with date ravioli. Barcelona should be applauded for embracing this avant-garde cuisine. because its influence is global.
