About Memories - The Langham Hotel

London's original grand hotel, the Langham Hotel is a paragon of splendour. It houses several restaurants, of which the most luxurious is arguably Memories. Above ceiling fans whirr beneath a hand-painted ceiling, while outside wonderful views across Regent Street and All Souls Church beckon the eye. Calling the taste buds is a European menu with a continental twist created by the gifted David Collard, formerly of Fleur and Petrus. Like the food, the menu's design is simple and honest - each dish is listed by the name of the main ingredient. For example, a ravioli starter of Cornish crab and salmon with ginger and coriander is called Ravioli. While a Devonshire best end with garlic flan, lamb sweetbread, butter beans and thyme jus is marked Lamb.

- Velouté; cauliflower with curry and coriander pesto
- Chicory; roulade of Jerusalem artichoke and black truffle vinaigrette
- Anchovies; tartelet of marinated tomato with garlic emulsion
- Langoustines; hand dived scallops with warm leek and girolles, corail dressing
- Lasagne; cassolette of Spider crab, gratinée thermidor
- Clams; duo of oysters with herb purée and ink crystalline
- Foie Gras; fine côpeaux, Autumn vegetables salad with red wine jelly

- Grouse; terrine and parfait with young beetroot and berry coulis
- Duck; Gesier, pressed with crispy potatoes and sherry reduction

- Brill; gnocchi and crones with vintage Parmesan and cep sauce
- Cod; steamed with tartare of oysters and Riesling sauce
- Red Snapper; tomato fondue with garlic and lobster red wine jus
- Pigeon; D'Anjou with mille-feuille of turnips and foie gras, sauce Périgueux
- Hare; royale, slow cooked 'Du Senateur Couteaux'
- Scottish Beef; fillet of Aberdeen Angus with galette of confit carrot, sauce Bourguignonne
- Veal; sweetbread with buttered cabbage and asparagus tips and a light veloute
- Pork Belly; salad with lardons, glazed apples and marjoram jus
Ravioli; ricotta with young spinach and rosemary foam
- Vol au Vent; soft poached egg, Swede purée, light Hollandaise and wild mushrooms

Dessert

- Chocolate; tuile pillar filled with bitter chocolate mousse and exotic fruit compôte
- Apple; warm tart with cider coulis and clotted cream
- Raspberry Pannacotta; champagne jelly, sorbet and pistachio biscotti
- Wave; vanilla tuile with a selection of home-made fruit sorbets and ice creams
- Trio; coffee, caramel and crema catalana
- Cheeses; English and French selection

Think vodka...in fact over 80 different varieties are available to choose from. If you really want to get into the Russian thing splash out some caviar from Sevruga to Beluga (£34-£140). The staff are attentive and extremely professional also decked out in Russian costumes. The bar closes at 11.00pm, but guests and diners are welcome to stay.
