Angela Hartnett at the Connaught has fabulous bloodlines. The Connaught itself is second only to the Bank of England and the House of Lords as a bastion of Britishness, and Gordon Ramsay is second to none in the vanguard of top-flight modern British cooking. So revamping, somewhat the dining room here and installing his fabulously accomplished protogee Angela Hartnett seems like the best of British innovations. Nina Campbell has sensitively brightened the panelled dining rooms with pale pistachio drapes, comfy chairs, checkered carpeting and modern paintings. The nineteenth-century menu has been comprehensively updated with a menu that features modern Italian cooking worthy of its Michelin star. The basic levels of luxury and refinement remain intact, and rightly so. Starters could include mosaique of pressed rabbit with toasted campagne bread or pumpkin-filled tortellini, mains might feature oven-roasted cannon of lamb with aubergine Parmigiana and rosemary jus or pan-roasted sea bass with sauteed new potatoes, mussel and tomato
ragout. A favourite main is smoked pork belly with pot-au-feu of summer veg with thyme and garlic bouillon. Puds feature things like roasted figs in sabayon, or warm griotte cherry and almond crostata with amaretto ice cream. The excellent sommelier is bursting with guidance to get you through the enormous wine list, or you may choose to browse on your own. The service is very, very good indeed.

- Fillet of halibut with pomme boulangère, braised leeks and mushroom bouillon
- Line caught sea bass with aubergine crisps, confit tomatoes and Tonnatore single estate olive oil
- Caramelised Moulard duck breast, spiced red cabbage, buttered baby navets and crushed dragees
- Breast of red leg partridge with celeriac and sweet corn, partridge sauce with hazelnut oil
